Caipirinha (Rum Sour)

    More than 35 years ago, cachaça would have been hard to find in this country. Today, a good liquor store is likely to have an entire shelf of Brazil’s sugarcane spirit. You can use rum instead, but then you’re making a daiquiri (not that there’s anything wrong with that).

    Coarsely chop 1/2 lime and put it into a cocktail shaker with 1 teaspoon sugar or to taste. Muddle the mixture with a spoon to extract the juice and essence from the lime. Add 1/2 cup crushed ice and 1/4 cup Brazilian rum or light Jamaican or Barbadian rum and shake the mixture vigorously. Pour the drink into a cocktail glass. Makes 1 drink.
