Ambrosia Arnaud’s

    This was probably not one of the cocktails you would get if you ordered “coffee” at Arnaud’s during Prohibition. “Count” Arnaud was arrested for violating the Volstead Act and his restaurant was closed, but, perhaps unsurprisingly, a jury of his peers set him free.

    In a cocktail shaker half-filled with ice cubes combine 2 tablespoons each of sweet vermouth, dry vermouth, and applejack and 1 teaspoon lime juice. Shake the mixture and strain it into a chilled Champagne glass. Fill the glass with chilled Champagne and add 1/2 teaspoon orange-flavored liqueur. Garnish the drink with a strip of lemon peel. Makes 1 drink.
