Agua Fresca de Pepino (Cucumber Cooler)

Makes4 servings (about 5 cups)
This recipe makes 1 blenderful; for 16 people, you’ll probably need about 4 batches.

1 medium cucumber
2 cups cold water
1 cup ice cubes
1/4 cup sugar
2 tablespoons fresh lime juice

Peel cucumber and cut into chunks. In a blender blend cucumber with remaining ingredients until completely smooth and pour into a glass pitcher. Cooler may be made 6 hours ahead and chilled, covered. Stir cooler before serving.
