  • 1/3 cup finely chopped mixed shallot, red onion, white onion, sweet onion, and leek (pale green and white part only)
  • 3 tablespoon chopped scallion
  • 1 small garlic clove, minced
  • 4 (1/2-inch-thick) slices country bread (from a 10-inch round loaf), halved crosswise
  • 4 cups coarsely grated good-quality aged Cheddar (preferably white; 3/4 lb)
  • 1/2 stick unsalted butter, softened
  • Equipment:

    a large heavy griddle (not nonstick)
  • Heat griddle over medium-low heat until hot. Stir together onion mixture, scallion, and garlic. Make 4 sandwiches with bread, cheese (packing it), and onion mixture. Butter both sides of sandwiches and cook, turning once, until bread is golden brown and cheese is melted, 5 to 8 minutes total.
