Crudo Fluke with Sea Beans and Radishes
Diary of a Foodie: Season Two: The Anglers

- 1/4 lb sea beans (see cooks' note, below)
- 1/4 lb radishes (about 5), cut into matchsticks
- 1 1/2 tablespoons fresh lime juice
- 1 (1/2-lb) piece highest-quality fluke fillet
- Good-quality extra-virgin olive oil for drizzling
- Sea salt for sprinkling

Toss together sea beans, radishes, lime juice, and salt to taste.

Holding a very sharp knife at a 45-degree angle, cut fluke into thin slices, transferring to 4 plates as cut (about 4 slices per plate) and arranging in a fan pattern.

Top fish with a small mound of sea-bean salad (you will have some salad left over), then drizzle with oil and sprinkle with sea salt. Serve immediately.
Cooks' note: Sea beans are available at specialty produce markets.
