radishes (about 5), cut into matchsticks

(1/2-lb) piece highest-quality fluke fillet

Good-quality extra-virgin olive oil for drizzling

Sea salt for sprinkling

Toss together sea beans, radishes, lime juice, and salt to taste.

Holding a very sharp knife at a 45-degree angle, cut fluke into thin slices, transferring to 4 plates as cut (about 4 slices per plate) and arranging in a fan pattern.

Top fish with a small mound of sea-bean salad (you will have some salad left over), then drizzle with oil and sprinkle with sea salt. Serve immediately.
