  • 1/2 cup mayonnaise
  • 1/4 cup finely chopped shallots
  • 1/4 cup minced chives
  • 1/4 cup finely chopped basil
  • 1/4 cup finely chopped chervil (optional)
  • 1 tablespoon red-wine vinegar
  • 1 tablespoon water
  • 1/2 teaspoon Dijon mustard
  • 4 drops Tabasco
  • Blend together all ingredients with salt and pepper to taste in a blender until smooth.
Cooks’ note: Dressing keeps, covered and chilled, 2 days.
