- 1/2 cup mayonnaise
- 1/4 cup finely chopped shallots
- 1/4 cup minced chives
- 1/4 cup finely chopped basil
- 1/4 cup finely chopped chervil (optional)
- 1 tablespoon red-wine vinegar
- 1 tablespoon water
- 1/2 teaspoon Dijon mustard
- 4 drops Tabasco

Blend together all ingredients with salt and pepper to taste in a blender until smooth.
Cooks’ note: Dressing keeps, covered and chilled, 2 days.
