Like roast onions, roasted garlic has a mellower flavor than raw, and it can be used as a time saver in many ways beyond this mayonnaise. Squeeze it out of its papery shell as needed to add to soups or to make a mild garlic butter.

- 2 medium heads roasted garlic
- 1 cup bottled mayonnaise

Squeeze enough roasted garlic out of its skin into a bowl to measure 3 tablespoons and mash with a fork. Stir in mayonnaise.
