Ruth’s Mother’s Recipes: Hermine’s Oatmeal Cookies

My mother’s very good friend Hermine appears in the chapter, “What we are made for.” She was a wonderful cook, and she almost always had a few of these lace cookies on hand.
  • 2 1/2 cups oats (instant are best)
  • 1 cup dark brown sugar
  • 1 teaspoon baking powder
  • 1 egg, beaten
  • 1 stick butter
  • 1 teaspoon vanilla
  • Mix all dry ingredients together.
  • Melt butter and add to dry ingredients. Mix well. Add the egg and the vanilla.
  • Drop by spoonfuls onto a well-greased cookie sheet and flatten with the back of the spoon. Bake at 350° for about 8 minutes, or until the edges of the cookies begin to brown: Remove from oven, let sit a minute or two, and then remove from the sheet. If they stick to the pan, put them back into the oven for a minute.
