My mother’s very good friend Hermine appears in the chapter, “What we are made for.” She was a wonderful cook, and she almost always had a few of these lace cookies on hand.

cups
oats (instant are best)

dark brown sugar

teaspoon
baking powder

egg, beaten

stick butter

teaspoon
vanilla

Mix all dry ingredients together.

Melt butter and add to dry ingredients. Mix well. Add the egg and the vanilla.

Drop by spoonfuls onto a well-greased cookie sheet and flatten with the back of the spoon. Bake at 350° for about 8 minutes, or until the edges of the cookies begin to brown: Remove from oven, let sit a minute or two, and then remove from the sheet. If they stick to the pan, put them back into the oven for a minute.
