Sherry Syrup

- 2/3 cup water
- 2/3 cup sugar
- 2/3 cup medium-dry Sherry

Bring all ingredients to a boil in a small heavy saucepan, stirring until sugar has dissolved. Cool completely.
Cooks’ note: Syrup can be made 5 days ahead and chilled.
