Sweet Cucumber and Radish Salad

Like it or not, cucumbers and radishes have become virtually seasonless. This salad provides a lively, refreshing counterpoint to a rich meal. What’s more, the whole dish can be put together in mere minutes.
- 1 large cucumber (1 lb)
- 1 bunch radishes
- 1/4 cup cider vinegar
- 1 1/2 tablespoons sugar
- 1 tablespoon vegetable oil

Peel cucumber, then halve lengthwise and slice crosswise 1/4 inch thick. Cut each radish lengthwise into 8 wedges.

Bring vinegar, sugar, 1/4 teaspoon salt, and 1/8 teaspoon pepper to a boil in a small saucepan, stirring until sugar has dissolved, then stir in oil.

Pour hot dressing over cucumbers and radishes in a bowl and stir, then let stand 10 minutes. Stir and season with salt before serving.
Cooks’ note: Salad can be made 4 hours ahead and chilled, covered.
