Passion-Fruit Margaritas
Makes4 Margaritas
July 1998
If fresh passion fruit isn’t available, substitute 3 cups passion-fruit nectar, frozen in ice-cube trays, for the strained fresh passion-fruit purée and, when ready to blend, omit the ice cubes.
- 1 lb fresh passion fruit (about 12)
- 3 cups ice cubes
- 3/4 cup white tequila
- 1/4 cup sugar
-
Halve passion fruits and scoop pulp and seeds into a blender. Blend pulp briefly (seeds should still be in large pieces). Force fruit through a fine sieve into a measuring cup and discard solids. In a blender, blend 1/2 cup purée with remaining ingredients until smooth. Pour drink into 4 stemmed glasses.
