- 1 small garlic clove
- 1 cup plain Turkish- or Greek-style yogurt
- 1 tablespoon fresh lemon juice
- 2 to 3 tablespoons water

Mince and mash garlic to a paste with 1/2 tsp salt, then stir garlic into yogurt with lemon juice and salt to taste. Thin with water to a pourable consistency. Let yogurt sauce stand, chilled, 20 minutes to allow flavors to blend.
