  • 2 lbs mussels, scrubbed
  • 1/4 cup chopped flat-leaf parsley
  • 2 garlic cloves, minced
  • ACCOMPANIMENT: crusty bread
  • Put mussels in an 11- to 12-inch heavy skillet (preferably cast-iron), then put skillet, uncovered, over medium-high heat. Cook, stirring occasionally, until mussels open wide and release their juices, 6 to 10 minutes. Stir in parsley and garlic and cook, stirring, 1 minute.
