Cocktail of the Week: White Port and Tonic

The longest days of the year (at least here in the northern hemisphere) deserve a long drink, and white port and tonic, sometimes called a “Portonic,” is the perfect summer quaffer. It’s refreshing, low in alcohol, and nicely balanced, especially if you use high-quality tonic like Fever Tree. Most of the major houses offer a dry white port, and nearly all are under $20.

In a highball glass filled with ice cubes pour 2 ounces white port and 4 ounces tonic. Squeeze a lemon wedge into the drink. Retire to veranda.
