Cocktail of the Week: Belmont Cocktail

As far as we can tell, this drink has nothing to do with the Belmont Stakes (June 6), but it’s berry season, and it’s a delicious concoction, and that’s good enough for us. You can buy raspberry syrup, or you can make it yourself.

To make raspberry syrup: Bring to a boil in a small heavy saucepan 1 pint raspberries, 1/3 cup sugar, and 1 tablespoon water, stirring until sugar is dissolved. Reduce heat and simmer, uncovered, stirring occasionally, 15 minutes. Strain through a fine-mesh sieve into a bowl, pressing gently on and then discarding solids. You should have about 1/2 cup syrup (if more, boil until reduced). Cool, then chill, covered.

To make Belmont Cocktail: In a shaker half full of cracked ice, combine 1 1/2 ounce gin, 1 ounce cream, and 1/4 ounce raspberry syrup. Shake gently for a few seconds and strain into a chilled cocktail glass.
