Broiled Salmon with Miso and Mirin

Five ingredients come together in less than 15 minutes to become one powerhouse dish. A stir-together mixture of mirin, miso (left over from Maricel Presilla’s versatile Miso Dressing), and sesame oil gilds broiled salmon fillets with sweetness and savor.
- 1/3 cup mirin (Japanese sweet rice wine)
- 1/4 cup white miso
- 1/2 teaspoon Asian sesame oil
- 4 (6- to 7-oz) salmon fillets with skin
- 1 scallion, chopped

Preheat broiler. Line bottom and sides of a 4-sided sheet pan with foil, then oil foil.

Stir together mirin, miso, and sesame oil until smooth. Put salmon skin down on sheet pan and season with 1/2 tsp pepper. Spread miso mixture over salmon and broil 6 inches from heat until just cooked through, 10 to 12 minutes. Serve sprinkled with scallion.
