Ruth’s Mother’s Recipes: Chunky Cheese Pâté

This is another strange blast from the past that I found among Mom’s clippings. I do remember this one; Mom was very fond of it. “So unusual,” she’d say as she softened the cream cheese,“and so easy. My guests always love it.”
  • 1 small package (3 ounces) cream cheese, softened
  • 1/2 cup grated sharp Cheddar cheese
  • 2 teaspoons dry Sherry
  • 1/2 teaspoon curry powder
  • 1/4 teaspoon salt
  • 1/2 8-ounce jar mango chutney, finely chopped
  • 3 scallions, finely sliced
  • Beat first 5 ingredients together.
  • Pat out into a 1/2-inch thick round on a pretty plate. Chill.
  • Spread with chutney, sprinkle with scallions. Serve with crackers.
