Smashed Potatoes and Peas

Honest isn’t a word that comes up much when side dishes are being discussed, but that’s exactly how these smashed potatoes and peas strike us. Serve them alongside the cornflake fried chicken for a southern-inspired supper for one.
  • 6 oz red boiling potatoes (about 4 small or 2 medium)
  • 1/3 cup frozen peas
  • 1 tablespoon unsalted butter
  • 1/4 cup milk
  • 1 scallion, chopped
  • Generously cover potatoes with cold water in a small saucepan. Add 1/2 tsp salt. Simmer, covered, until just beginning to get tender, about 8 minutes.
  • Add peas and simmer, partially covered, until potatoes are tender, about 5 minutes. Drain, then return to pan. Add butter, milk, and 1/8 tsp each of salt and pepper. Let stand off heat 1 minute, then add scallion. Coarsely mash.
