Honest isn’t a word that comes up much when side dishes are being discussed, but that’s exactly how these smashed potatoes and peas strike us. Serve them alongside the cornflake fried chicken for a southern-inspired supper for one.
- 6 oz red boiling potatoes (about 4 small or 2 medium)
- 1/3 cup frozen peas
- 1 tablespoon unsalted butter
- 1/4 cup milk
- 1 scallion, chopped
-
Generously cover potatoes with cold water in a small saucepan. Add 1/2 tsp salt. Simmer, covered, until just beginning to get tender, about 8 minutes.
-
Add peas and simmer, partially covered, until potatoes are tender, about 5 minutes. Drain, then return to pan. Add butter, milk, and 1/8 tsp each of salt and pepper. Let stand off heat 1 minute, then add scallion. Coarsely mash.
