My Fair Lady the Empress

    The Empress, in Victoria, British Columbia, which was built by the Canadian Pacific Railroad a century ago, presides over the city’s Inner Harbor. The ivy-covered, château-style hotel is famous for its afternoon tea, but a reader from Thibodaux, Louisiana was more impressed with this cocktail, which he had at The Library Bar (now a meeting room).

    1 pony (1 ounce) Amaretto, 1 pony (1 ounce) light rum, 3/4 cup chilled unsweetened pineapple juice, a pineapple wedge and a maraschino cherry for garnish

    In a cocktail shaker combine the Amaretto, the rum, and the pineapple juice, pour the mixture into a snifter, and garnish the drink with the pineapple wedge and the cherry. Makes 1 drink.
