Margarita

    Although we published several similar recipes over the years—tequila, lime, and a sweetener—it wasn’t until the ’80s that the Margarita became ubiquitous. These proportions result in a pretty tart drink so if you choose to garnish it with a lime you definitely won’t want to squeeze it into your glass.

    Rub the rim of a Martini glass with a cut lime, dip in salt to coat it lightly, and chill the glass. In a cocktail shaker combine 1 jigger (1 1/2 ounces) each of tequila and lime juice, 1 pony (1 ounce) triple sec or Cointreau, and, if desired, 1/2 teaspoon superfine granulated sugar, add 5 ice cubes, and shake the mixture for 15 seconds. Strain the drink into the chilled glass.

    For a frozen Margarita rub the rim of an Old-Fashioned glass with a cut lime, dip it in salt to coat it lightly, and chill the glass. In a blender, blend the mixture including the ice cubes for 30 seconds and pour it into the glass. Makes 1 drink.
