mock hollandaise sauce

  • 10 tablespoons butter
  • 2 tablespoons flour
  • 3/4 cup scalded milk
  • 3 egg yolks
  • 1 tablespoon strained lemon juice
  • Melt 2 tablespoons butter, and blend will with an equal amount of flour. Stirring constantly, and add 3/4 cup scalded milk, salt, pepper, and a few grains of cayenne to taste. Bring this mixture to the boiling point, beating all the while; then remove from the fire, and stir in 3 egg yolks and, bit by bit, 1/2 cup butter. Finish with 1 tablespoon strained lemon juice.
