Ice Treat: Gola

Country of Origin: India

Description: One of the most satisfying ways to battle India's scorching heat is to cool down curbside with a gola crafted by one of the many street vendors. Known as Indian ice candy, the gola is formed by shaping crushed ice by hand and then skewering it on a stick. The frozen lollipop is then drenched with brightly colored fruit syrups, in flavors such as lemon, lime, and cherry, as well as a variety of seasonings, such as salt and pepper, and enjoyed sans spoon.
