For seasonal seafood aficionados in Quebec, springtime signals the arrival of two much-loved local crustaceans. First, snow crabs from the Gaspesie have just hit the markets, and they'll only be around for the next few weeks. Plus they're eco-friendly: snow crabs' sustainable harvest means they get the environmental and ethical green light. Second, Matane shrimp have also arrived. Small, briny, sweet—they're everything overplumped prawns aren't. And unlike those shelf-stable supermarket cocktail platters, Matanes have the shelf-life of a beached tadpole, so gobble 'em up fast—en masse.
