A Piece of Cake at the Mandarin in Hong Kong

One of the world's leading authorities on Chinese food, Nina Simonds, reports that the Mandarin Oriental in Hong Kong is looking pretty good these days as it undergoes a full-tilt, $140 million renovation, to be completed later this year. The hotel, a stunning beauty when in opened back in the 1960s, seemed to lose some of its edge, if never its loyal following, as dazzling new hotels went up. But now the Mandarin is catching up. London restaurateur Sir Terence Conran has already revamped the much-loved Mandarin Grill, and, on the top floor of the hotel, with a panoramic view of Victoria Harbour, Michelin three-star chef Pierre Gagnaire's stunning new restaurant is almost impossible to get into. But the most extraordinary new addition is the Mandarin Cake Shop, where the exquisite and inventive cakes (shown here) prepared by the hotel's head pastry chef, Yves Matthey, will leave you breathless.
