golden raisins

medium onions, thinly sliced lengthwise

ground ginger

(3-inch) cinnamon sticks

a pinch turmeric

a pinch saffron

Soak raisins in 1 cup warm water for 15 minutes.

Cook onions in oil with 1 tsp salt in a 3- to 4-quart heavy pot over medium heat, stirring frequently, until soft, 8 to 10 minutes. Add ginger, cinnamon sticks, turmeric, saffron, and 3/4 tsp pepper and cook, stirring, 2 minutes. Drain raisins and add to onion mixture with sugar and simmer until mixture is slightly thickened, about 10 minutes. Cool to room temperature.
