Royal Rickey

    A rickey always contains lime juice and sparkling water, but everything else is negotiable. Liqueurs and syrups tend to balance the citrus best. This cocktail is a must for the berry lover, and making the syrup is definitely worth the effort.

    1 jigger (1 1/2 ounces) gin, 1 tablespoon dry vermouth, 1 tablespoon fresh lime juice, about 1/2 to 2/3 cup chilled seltzer, 1 tablespoon raspberry syrup or bottled raspberry syrup (available at specialty food shops), a lime slice for garnish

    In a tall glass filled with ice combine the gin, the vermouth, and the lime juice, fill the glass with the seltzer, and add the raspberry syrup. Stir the drink and garnish it with the lime slice. Makes 1 drink.
