As I admired my creation, I seized upon the final flourish that would bring it solidly into the 21st century: wispy flakes of sea salt sprinkled like snow over the glaze at the last second. Salted chocolate has been all the rage among chocolatiers and pastry chefs in recent years, and with good reason. Chocolate comes to life around salt, dancing jigs around your taste buds. And salt does wonders for honey, too. If you’ve ever had the life–changing combination of feta cheese and honey, you’ll know what I’m talking about. No matter what religion you adhere to—and no matter what holidays and special occasions are coming up on your calendar—you can count on honey, spices, chocolate, and salt to come together to form one damn–good cake.
