Cocktail of the Week: Kosher Champagne Cocktail

Good kosher Champagne and sparkling wine aren’t hard to find (Charles Heidsick, Laurent Perrier, Pommery, and Yarden all make excellent kosher bottlings), but Stirrings Blood Orange Bitters is, as far as we can tell, the only brand of kosher bitters. With it you can make this classic—and kosher—Champagne cocktail.

Put a kosher sugar cube in a Champagne glass or white wine glass and add two dashes bitters. Once the bitters have been absorbed, gently pour well-chilled Champagne or sparkling wine into the glass a few ounces at a time (to avoid foam-over). Twist a piece of freshly cut lemon peel over the cocktail if you want a little extra citrus kick.
