Mint is such a common backyard herb that it’s easy to take it for granted. But there’s a reason why it’s one of the most popular flavorings in the world: In taste and fragrance, it manages to be both cooling and warming all at once. The Orange and Mint Loaves, which get their flavor essence from mint-infused milk, are delicious on their own, but something magical happens when they’re accompanied by a dish of fresh-mint butter. Spearmint is bright and mellow, with an almost lemony backnote; peppermint is stronger and spicier.
