Cynar, the artichoke–derived Italian liqueur, is popular in the Swiss border region of Ticino, where Italian is spoken; here, shot through with vermouth and soda, it maintains that bitter–followed–by–sweet sensation you get when eating an artichoke (plus a little fizz). And, like the vegetable itself, it goes well with cheese—which is to say it goes very well with the Appenzeller crisps.
6oz (3/4 cup) Cynar
3oz (6 tablespoons) sweet vermouth
8oz (1 cup) fresh orange juice
12oz (1 1/2 cups) chilled club soda or seltzer
Garnish:
thin orange wedges
Stir together Cynar, vermouth, and orange juice in a pitcher. Divide among 6 (12-ounce) glasses filled with ice cubes, then top off drinks with club soda.
