- Normally a chilled cocktail prepared without ice is far too high in alcohol to be palatable, but this extremely wet Martini variant leans heavily on the aperitif wine Dubonnet, which is only 36 proof so the lack of dilution from stirring over ice isn’t a problem.
2 jiggers (3 ounces) Dubonnet blanc, 1 pony (1 ounce) gin, 4 drops of Angostura bitters
In a glass combine the Dubonnet, the gin, and the bitters and chill the mixture, covered, for 1 hour, or until it is cold. Stir the mixture and pour it into a chilled stemmed cocktail glass. Makes 1 drink.
