Bertha (Tequila and Honey Cocktail)

    Bar Berta—a Taxco, Mexico, institution that opened in the ’30s, is the source of this delicious Margarita variant. Taxco is best known for its silver jewelry, and this drink is best with silver tequila.

    Pour 2 ounces tequila and 1 ounce each of honey and lime juice into a double Old Fashioned or highball glass and stir the mixture until it is well blended. Blend in thoroughly 1 egg white, beaten until it is stiff. Add crushed ice and a splash of soda, or to taste. Makes 1 drink.
