Waffles

Makes 12

Sift 6 cups pastry flour; then add 2 tablespoons baking powder and 1 1/2 teaspoons salt, and sift together. Beat 9 egg yolks until they are thick, and combine with 3 cups sweet milk, alternating with 3/4 cups hot melted shortening. Blend thoroughly, and add to the flour mixture, beating briskly. Then fold in the 9 egg whites, stiffly beaten, but not dry, and pour, as needed, into the waffle iron.
